  • 8 corn or flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a large baking dish with nonstick spray.
  2. In a skillet over medium heat, add olive oil. Sauté chopped onions until translucent; then add minced garlic and cook until fragrant.

  4. Spread a thin layer of enchilada sauce in the baking dish. Layer tortillas over the sauce followed by half of the chicken mixture and half of the cheese.

  6. Cover with foil and bake for 25 minutes; remove foil and bake for an additional 15 minutes until bubbly and golden brown.
