Ingredients

Scale
  • 8 oz rotini or fusilli pasta
  • 2 cups fresh corn kernels (about 2 ears)
  • 1 medium red bell pepper, diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1/2 cup mayonnaise or Greek yogurt

  • Salt and pepper to taste

  4. In a large bowl, whisk together mayonnaise (or Greek yogurt), lime juice, chili powder, salt, and pepper.
  5. Combine cooled pasta, corn kernels, diced bell pepper, and chopped cilantro in the bowl with dressing. Toss gently until well-coated.
  6. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
