  • 1 cup sushi rice
  • 8 oz sushi-grade salmon, cubed
  • 2 sheets nori, cut into strips
  • 1/2 cucumber, sliced into matchsticks
  • 1 ripe avocado, diced
  • 3 tbsp mayonnaise
  • 12 tbsp sriracha (to taste)
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp lime juice
  • 1 tbsp toasted sesame seeds (for garnish)
  • 2 green onions, finely sliced (for garnish)

Instructions

  1. Rinse sushi rice under cold water until clear. Cook according to package instructions (about 20 minutes). Let cool slightly and season with rice vinegar.
  2. Marinate the salmon in a bowl with soy sauce, sesame oil, and lime juice for about 15 minutes.
  3. Prepare the cucumber and avocado while the salmon marinates.
  4. In a small bowl, mix mayonnaise and sriracha for spicy mayo.
  5. Assemble the bowls by placing sushi rice at the bottom, followed by marinated salmon, cucumber sticks, and avocado.
  6. Drizzle with spicy mayo and top with sesame seeds and green onions. Serve immediately.
