  • 1 lb Italian sausage (sweet or spicy)
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 1 cup breadcrumbs (plain or seasoned)
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh parsley or sage (chopped)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • ¼ cup toasted pine nuts (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the acorn squashes in half and scoop out the seeds. Place cut-side up on a baking sheet.
  3. Drizzle with olive oil and season with salt and pepper. Roast for 30 minutes until tender.
  4. In a skillet over medium heat, sauté diced onion for about 5 minutes until translucent. Add minced garlic and cook for an additional minute.
  5. Crumble in the Italian sausage and cook until browned, about 6–8 minutes.
  6. Stir in breadcrumbs, Parmesan cheese, chopped herbs, and pine nuts if using.
  7. Generously fill each roasted acorn squash half with the sausage mixture and return to the oven for another 15–20 minutes until heated through.
