  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 cup orzo pasta

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions and garlic until fragrant (about 3 minutes).
  2. Add diced carrots and celery; stir for another 5 minutes until slightly softened.
  3. Add chicken breasts and chicken broth. Simmer for about 15 minutes until the chicken is cooked through.
  4. Remove chicken, shred it with two forks, and return it to the pot with lemon juice.
  5. Stir in orzo and cook according to package instructions (8-10 minutes).
