  • 1 lb lean Ground Beef
  • 1 medium Onion, chopped
  • 2 tbsp Chili Powder
  • 1 can (14.5 oz) Diced Tomatoes with green chilies
  • 2 cups Shredded Cheese (cheddar and Monterey Jack blend)
  • 1 cup Sour Cream
  • 2 Green Onions, chopped

Instructions

  1. Preheat oven to 350°F (175°C) and grease your baking dish.
  2. In a skillet, brown the ground beef over medium heat until no longer pink. Add chopped onion and sauté until translucent.
  3. Stir in chili powder and diced tomatoes; cook for an additional 5 minutes.
  4. Layer half of the Fritos in the baking dish, followed by half of the beef mixture and one cup of shredded cheese.
  5. Repeat layers with remaining Fritos, beef mixture, and top with another cup of cheese.
  6. Bake for 20-25 minutes until bubbly and golden brown.
  7. Let cool slightly before serving; drizzle sour cream on portions and garnish with green onions.
