  • 8 oz fettuccine pasta
  • 2 skinless salmon fillets (about 6 oz each)
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 2 tbsp fresh lemon juice
  • 2 tbsp fresh dill, chopped
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Cook the fettuccine in salted boiling water until al dente. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Sear the salmon for 4-5 minutes per side until golden. Remove and flake into bite-sized pieces.
  3. Add minced garlic to the skillet; sauté until fragrant (about 30 seconds). Deglaze with lemon juice.
  4. Pour in heavy cream, stirring until slightly thickened (3-5 minutes). Season with salt and pepper.
  5. Toss the cooked pasta and flaked salmon into the sauce until well-coated.
  6. Stir in dill and Parmesan cheese. Serve hot, topped with extra cheese if desired.
