  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste
  • 1 baguette or ciabatta bread (about 12 oz)

Instructions

  1. Preheat oven to 400°F (200°C). Coat an oven-safe dish with nonstick spray.
  2. Season chicken breasts with salt, pepper, and olive oil; place in the dish.
  3. Sprinkle minced garlic over the chicken. Bake for 25-30 minutes until cooked through (internal temp of 165°F/75°C).
  4. Combine diced tomatoes, chopped basil, minced garlic, balsamic vinegar, olive oil, salt, and pepper in a bowl; let flavors meld.
  5. Slice baguette or ciabatta into thick pieces and brush lightly with olive oil. Toast in the oven for about 5 minutes.
  6. Remove chicken from the oven; slice thinly against the grain.
  7. Top each toasted slice of bread with sliced chicken and tomato mixture; return to oven for another 5 minutes.
