Instructions

- Sprinkle minced garlic over the chicken. Bake for 25-30 minutes until cooked through (internal temp of 165°F/75°C).
- Combine diced tomatoes, chopped basil, minced garlic, balsamic vinegar, olive oil, salt, and pepper in a bowl; let flavors meld.
- Slice baguette or ciabatta into thick pieces and brush lightly with olive oil. Toast in the oven for about 5 minutes.
- Remove chicken from the oven; slice thinly against the grain.
- Top each toasted slice of bread with sliced chicken and tomato mixture; return to oven for another 5 minutes.
