  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz penne pasta
  • 8 oz cream cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 2 tbsp Cajun seasoning
  • 3 cloves fresh garlic, minced
  • 2 cups low-sodium chicken broth
  • 1/2 cup heavy cream
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Dice the chicken into bite-sized pieces and season with Cajun seasoning.
  3. In a large skillet, heat olive oil over medium heat. Cook the chicken until golden brown (about 7 minutes). Remove and set aside.
  4. In the same skillet, sauté minced garlic for one minute. Add cream cheese until melted and smooth.
  5. Gradually whisk in chicken broth and heavy cream until well combined.
  6. Stir cooked pasta and chicken into the sauce until evenly coated.
  7. Transfer to a greased baking dish and top with mozzarella and cheddar cheese.
