  • 2 lbs bone-in chicken pieces (thighs and drumsticks)
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup tomatoes (fresh or canned), diced
  • 2 sprigs fresh thyme
  • 1 tbsp brown sugar
  • 2 tbsp soy sauce
  • 1 cup low-sodium chicken broth
  • 1 Scotch bonnet pepper (optional)

Instructions

  1. Marinate the chicken with salt, pepper, and garlic for at least 30 minutes.
  2. Heat oil in a large pot over medium heat. Sauté onions and bell peppers until soft (about 5 minutes).
  3. Add marinated chicken skin-side down and brown on both sides.
  4. Stir in tomatoes and thyme; mix gently.
  5. Pour in soy sauce and chicken broth; add Scotch bonnet if desired.
  6. Cover and simmer on low for about 45 minutes, until the chicken is tender.
