Description

Rich Chicken Stroganoff is a comforting and creamy dish that combines tender chicken, earthy mushrooms, and a silky sauce, making it a perfect choice for family dinners or cozy evenings. With its satisfying flavors and easy preparation, you’ll have everyone asking for seconds. Serve it over egg noodles or rice to soak up every delicious bite!

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz fresh mushrooms (cremini or button), sliced
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 cup sour cream (full-fat)
  • 1/4 cup all-purpose flour
  • 2 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Cooked egg noodles or rice for serving

Instructions

  1. Slice the chicken breasts into bite-sized pieces. Heat olive oil in a large skillet over medium-high heat. Sauté chicken until golden brown, about 5 minutes.
  2. Add onions and garlic to the skillet. Cook until fragrant and translucent, approximately 3 minutes.
  3. Stir in mushrooms and cook until softened, about 4 minutes.
  4. Sprinkle flour over the mixture while stirring constantly. Gradually add chicken broth, stirring continuously to avoid lumps. Bring to a gentle simmer.
  5. Once thickened (about 5 minutes), remove from heat and stir in sour cream until fully incorporated.
  6. Serve over cooked egg noodles or rice, garnished with fresh parsley if desired.

Keywords: For added depth of flavor, consider using white wine in place of some broth. Feel free to substitute mushrooms with spinach for a different twist. Store leftovers in an airtight container; reheat gently on low heat.
