Ingredients

Scale
  • 1 ribeye steak (1-inch thick, approx. 12 oz)
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 medium shallot, finely chopped
  • 1/4 cup cognac
  • 1/2 cup heavy cream
  • 1 tsp fresh thyme, chopped
  • 1 tsp fresh parsley, chopped
  • Salt and freshly cracked pepper to taste

Instructions

  1. Take the steak out of the fridge and let it sit at room temperature for 30 minutes. Season both sides with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat until shimmering. Sear the steak for 4-5 minutes on each side until browned. Remove and rest under foil.
  3. In the same skillet, add butter and chopped shallots; sauté until translucent (about 3 minutes).
  4. Carefully deglaze with cognac; scrape any browned bits from the pan and simmer for 2 minutes.
  5. Lower heat, stir in heavy cream, and simmer until thickened (3-4 minutes). Adjust seasoning if necessary.
  6. Slice the rested steak against the grain and serve drizzled with cognac cream sauce and garnished with herbs.
