  • 4 large eggs

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet over medium heat, add olive oil. Sauté bell peppers and spinach until tender (3-4 minutes).
  3. Whisk eggs with salt and pepper in a bowl. Add to the skillet with veggies, stirring gently until scrambled but still slightly runny.
  4. On a baking sheet, place the flatbread and spread the egg mixture evenly on top. Sprinkle generously with cheese.
  5. Bake for 10-12 minutes until edges are golden brown and crispy.
