Ingredients

Scale
  • 8 oz high-quality dark chocolate (at least 60% cacao)
  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter
  • 2 tbsp cocoa powder (for coating)
  • Optional flavor add-ins: 1 tsp vanilla extract or a pinch of sea salt

Instructions

  1. Finely chop the dark chocolate and place it in a heatproof bowl.
  2. In a saucepan, heat the heavy cream over medium heat until it just begins to simmer. Pour it over the chocolate and let it sit for 5 minutes before stirring until smooth.
  3. Add unsalted butter and mix until fully incorporated. Cover and chill in the refrigerator for about 2 hours.
  4. Scoop chilled ganache using a melon baller and roll into balls with your hands.
  5. Roll each truffle in cocoa powder or your choice of coating (i.e., crushed nuts).
  6. Place truffles in mini cupcake liners for presentation. Serve immediately or store in an airtight container in the fridge for up to two weeks.
