  • 1 can black beans (15 oz), rinsed
  • 2 fresh bell peppers, diced
  • 1 medium onion, diced
  • 2 tsp taco seasoning
  • 2 cups Mexican blend shredded cheese
  • 2 cups crushed tortilla chips
  • Sour cream or Greek yogurt (for serving)

Instructions

  1. Preheat the oven to 375°F (190°C) and spray a large baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, cook the chicken breasts until golden brown on both sides (about 5-7 minutes per side). Shred the cooked chicken using two forks.
  3. Sauté diced onions and bell peppers in the same skillet until softened (about 4-5 minutes).
  4. In a large bowl, combine shredded chicken, black beans, sautéed vegetables, taco seasoning, and half of the shredded cheese.
  5. Layer half of the crushed tortilla chips at the bottom of the prepared baking dish. Pour half of the chicken mixture over them and repeat with another layer of chips and mixture. Top with remaining cheese.
