  • 1 cup sweet corn (canned or frozen)
  • 1 red bell pepper, diced
  • 1 small red onion, finely chopped
  • 2 Roma tomatoes, deseeded and diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tbsp olive oil
  • 1 jalapeño pepper, diced (seeds removed for less heat)

Instructions

  1. In a large mixing bowl, combine black beans, corn, red bell pepper, red onion, and tomatoes.
  2. Squeeze fresh lime juice over the mixture and drizzle in olive oil. Toss gently until well combined.
  3. Stir in diced jalapeño and chopped cilantro.
  4. Cover with plastic wrap or transfer to an airtight container. Chill in the refrigerator for at least one hour to let flavors meld.
