- Juice of 2 limes
- 2 tbsp olive oil
- 1 jalapeño pepper, diced (seeds removed for less heat)
Instructions
- In a large mixing bowl, combine black beans, corn, red bell pepper, red onion, and tomatoes.
- Squeeze fresh lime juice over the mixture and drizzle in olive oil. Toss gently until well combined.
- Stir in diced jalapeño and chopped cilantro.
- Cover with plastic wrap or transfer to an airtight container. Chill in the refrigerator for at least one hour to let flavors meld.
