  • 1 cup dill pickles, chopped

  • 1 cup bell peppers (red or yellow), diced

  • 2 tbsp Dijon mustard
  • 2 tbsp fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. Chop the dill pickles, red onion, and bell peppers into bite-sized pieces.
  3. In a bowl, whisk together mayonnaise, Dijon mustard, salt, pepper, and fresh dill until smooth.
  4. In a large mixing bowl, combine the cooled pasta, chopped veggies, and dill pickle slices.
  5. Pour the dressing over the pasta mixture and gently fold until well coated.
  6. Cover and chill in the refrigerator for at least one hour before serving.
