Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, whisk eggs, milk, and vegetable oil until smooth.
  4. Pour wet ingredients into dry ingredients and mix until just combined.
  5. Line a cupcake pan with liners and fill each about two-thirds full with batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean. Cool on a wire rack.
  7. For frosting: Beat softened butter until creamy; gradually add powdered sugar and mix on low speed until combined.
  8. Add orange food coloring and vanilla extract; mix well.
  9. Once cupcakes are cool, pipe or spread frosting on top and decorate as desired.
