Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 cups low-sodium chicken broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Pinch of red pepper flakes (optional)

Instructions

  1. Prepare your ingredients by chopping the garlic and onion.
  2. Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, then sear until golden brown on both sides (about 5 minutes per side). Remove from skillet.
  3. In the same skillet, sauté onion and garlic until translucent (about 3–4 minutes).
  4. Stir in cream of mushroom soup and chicken broth until well combined.
  5. Return chicken to the skillet, cover, and simmer on low heat for about 20 minutes until cooked through.
  6. Cook the long-grain white rice according to package instructions while the chicken simmers.
  7. Serve smothered chicken over fluffy rice and enjoy!
