Ingredients
- 4 boneless, skinless chicken breasts (about 1 lb)
- 1 cup orzo pasta
- 2 cups fresh spinach
- 1 cup cherry tomatoes, halved
- ½ cup crumbled feta cheese
- 3 tbsp extra virgin olive oil
- 2 cloves garlic, minced
- Juice of 1 lemon (about 3 tbsp)
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Season chicken with salt and pepper, then cook for about 6 minutes on each side until golden brown. Remove from pot and let rest.
- In the same pot, sauté minced garlic until fragrant (about 30 seconds). Add orzo and stir well.
- Pour in 3 cups of chicken broth; bring to a gentle boil. Reduce heat to low and simmer uncovered for about 10 minutes until liquid is absorbed.
- Chop rested chicken into bite-sized pieces and fold in spinach and cherry tomatoes. Stir for another minute until spinach wilts.
- Return chicken to the pot along with crumbled feta cheese and lemon juice. Mix until combined; let sit off heat for five minutes before serving.
