- 4 cloves fresh garlic, minced
- 1 large onion, chopped
- 1 cup bell peppers, chopped (mix of colors)
- 1 cup carrots, sliced
- 2 sprigs fresh thyme
- 2 bay leaves
- ¼ cup low-sodium soy sauce
- 1 tbsp brown sugar
- 2 cups chicken broth
- 1 tsp pimento seeds (allspice)
- Salt and pepper to taste
Instructions
- Rinse chicken thighs under cold water and pat dry.
- In a large pot, heat oil over medium heat. Sauté onions until translucent (3–4 minutes).
- Add chicken pieces skin-side down and sear until golden brown (5–7 minutes per side).
- Mix in garlic, bell peppers, carrots, thyme, bay leaves, pimento seeds, salt, and pepper; cook for another 3 minutes.
- Pour in soy sauce and sprinkle brown sugar; add enough chicken broth to cover half the chicken. Stir well.
- Bring to a boil, reduce heat to low, cover, and simmer for 30–40 minutes until chicken is tender.
