  • 4 ears of fresh corn on the cob
  • 1/2 cup mayonnaise
  • 1/4 cup Mexican crema
  • Juice of 1 lime (approximately 2 tablespoons)
  • 1 teaspoon chili powder
  • 1/2 cup crumbled Cotija cheese (or feta)
  • 1/4 cup chopped cilantro
  • Salt to taste

Instructions

  1. Shuck the corn and rinse under cold water.
  2. Preheat the grill to medium-high heat and grill corn for 10-15 minutes, turning occasionally until charred.
  3. In a bowl, mix mayonnaise, Mexican crema, lime juice, chili powder, and salt until smooth.
  4. Remove corn from grill and brush with the creamy mixture.
  5. Sprinkle crumbled cheese over the corn while warm and finish with chopped cilantro.
  6. Serve immediately with extra lime juice if desired.
