  • 1 cup plain breadcrumbs (or panko for extra crunch)
  • 2 large eggs
  • 2 tbsp fresh dill, chopped
  • 2 tbsp fresh parsley, chopped
  • 1 small onion, finely chopped
  • 2 tbsp lemon juice (freshly squeezed)
  • Salt and pepper to taste
  • Oil for frying (vegetable or olive oil)

Instructions

  1. Heat oil in a skillet over medium heat.
  2. Sauté the finely chopped onion until soft and fragrant, about 5 minutes.
  3. In a mixing bowl, combine flaked salmon, sautéed onions, breadcrumbs, eggs, herbs, lemon juice, salt, and pepper. Mash until well blended but still chunky.
  4. Form the mixture into small patties (about 2-3 inches wide) and place them on a lined baking sheet.
  5. Fry each patty for about 3-4 minutes per side until golden brown and crispy. Drain on paper towels before serving.
