Instructions
- Preheat your oven to 425°F (220°C).
- Wash and scrub the Idaho potatoes, leaving the skins on. Cut into even chunks.
- In a large bowl, combine potato chunks with olive oil, minced garlic, salt, pepper, and fresh herbs if using. Toss until well coated.
- Spread the mixture onto a parchment-lined baking sheet in a single layer.
