  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp honey or maple syrup (adjust for sweetness)
  • 1 tbsp freshly squeezed lime juice
  • ½ tsp vanilla extract

Instructions

  1. Wash and slice the peaches into small pieces, removing the pits.
  2. In a blender, combine sliced peaches, coconut milk, honey or maple syrup, lime juice, and vanilla extract. Blend until smooth.
  3. Taste the mixture and adjust sweetness if necessary.
  4. Pour the mixture into popsicle molds, leaving some space at the top for expansion.
  5. Insert sticks and freeze for 4-6 hours until solid.
  6. To release popsicles, run warm water over the molds for about 10 seconds before gently pulling them out.
