Description

Oven-roasted chicken is a classic dish that delivers crispy skin and juicy meat, perfect for family dinners or special occasions.


Ingredients

  • 1 whole chicken (approximately 45 lbs)
  • 2 tbsp extra virgin olive oil
  • 2 tsp salt
  • 1 tsp black pepper
  • 4 garlic cloves, crushed
  • 1 lemon, quartered
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the chicken under cold water and pat it dry with paper towels.
  3. Rub the olive oil generously over the chicken, then season with salt and pepper inside and out.
  4. Stuff the cavity with crushed garlic, lemon quarters, rosemary, and thyme.
  5. Place the chicken in a roasting pan breast-side up and roast for about 75 minutes until the skin is golden brown.
  6. Check that it reaches an internal temperature of 165°F (74°C) in the thickest part using a meat thermometer.
  7. Allow the chicken to rest for 10-15 minutes before carving.
