- 1 whole chicken (approximately 4–5 lbs)
- 2 tbsp extra virgin olive oil
- 2 tsp salt
- 1 tsp black pepper
- 4 garlic cloves, crushed
- 1 lemon, quartered
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
Instructions
- Preheat your oven to 425°F (220°C).
- Rinse the chicken under cold water and pat it dry with paper towels.
- Rub the olive oil generously over the chicken, then season with salt and pepper inside and out.
- Stuff the cavity with crushed garlic, lemon quarters, rosemary, and thyme.
- Place the chicken in a roasting pan breast-side up and roast for about 75 minutes until the skin is golden brown.
- Check that it reaches an internal temperature of 165°F (74°C) in the thickest part using a meat thermometer.
- Allow the chicken to rest for 10-15 minutes before carving.
