  • 34 boneless, skinless chicken breasts
  • 8 oz fettuccine pasta
  • 2 tbsp Cajun seasoning
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 4 cloves garlic (minced)
  • 1 red bell pepper (chopped)
  • 1 green bell pepper (chopped)
  • 2 green onions (sliced)
  • 2 tbsp extra virgin olive oil
  • Salt & pepper to taste

Instructions

  1. Cook the fettuccine in salted boiling water until al dente; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season chicken with salt, pepper, and Cajun seasoning. Sauté until golden brown on both sides; remove from skillet.
  3. In the same skillet, sauté minced garlic and chopped bell peppers until softened.
  4. Lower heat and stir in heavy cream; gradually add Parmesan cheese until melted.
  5. Slice the chicken into strips and return it to the skillet along with drained pasta. Toss until well coated.
  6. Sprinkle sliced green onions over the top before serving.
