Ingredients

  • 4 cups firm cucumbers, sliced into spears or rounds
  • 6 cloves fresh garlic, smashed
  • 1 cup fresh dill sprigs
  • 2 tsp red pepper flakes (adjust to taste)
  • 1 cup white vinegar
  • 1 cup water
  • 2 tbsp sugar
  • 2 tbsp kosher salt

Instructions

  1. Wash and slice cucumbers into desired shapes.
  2. Sterilize jars by boiling them in water for 10 minutes.
  3. In a saucepan over medium heat, combine vinegar, water, sugar, salt, red pepper flakes, and smashed garlic. Stir until dissolved and bring to a simmer.
  4. Layer cucumber slices with dill sprigs and additional garlic in sterilized jars.
  5. Pour hot brine over packed jars until filled to about 1/2 inch from the top.
  6. Wipe jar rims clean and seal with lids; cool at room temperature before refrigerating.
  7. Allow pickles to sit in the fridge for at least 24 hours for best flavor.
