- 2 medium eggplants
- 1 lb ground beef or lamb
- 1 large onion
- 4 cloves garlic
- 28 oz canned tomatoes
- 4 tbsp butter
- 4 tbsp flour
- 2 cups milk
- pinch of nutmeg
- 1 cup grated Parmesan cheese
- Olive oil
- Salt and pepper
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat olive oil and sauté chopped onions until soft; add minced garlic.
- Brown ground meat in the skillet; stir in canned tomatoes with salt and pepper. Simmer until thickened.
- For béchamel sauce, melt butter, whisk in flour, gradually add milk, and season with nutmeg until thickened.
- Layer sliced eggplant in a baking dish followed by the meat mixture and béchamel sauce. Top with grated cheese.
- Bake for 45 minutes until golden brown; let it rest for 15 minutes before serving.
