  • 4 Large Russet Potatoes
  • 1 lb Sirloin or Ribeye Steak
  • 1 cup Sharp Cheddar Cheese, shredded
  • ½ cup Sour Cream
  • ¼ cup Green Onions, chopped
  • ½ cup Bacon Bits
  • 2 tbsp Butter
  • Salt and Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Scrub and dry the russet potatoes, poke holes with a fork, then rub with olive oil and salt.
  2. Bake the potatoes directly on the oven rack for 45-60 minutes until tender.
  3. In a skillet over medium-high heat, cook diced steak bites in oil for 4-5 minutes until browned.
  4. While the steak cooks, chop green onions and crumble bacon bits.
  5. Once baked, slice the potatoes open and fluff the insides with a fork. Add butter immediately to melt.
  6. Top each potato with shredded cheddar cheese, steak bites, sour cream, green onions, and bacon bits.
