  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 medium onion, chopped
  • 1 cup bell peppers, chopped (mixed colors)
  • 2 cups shredded cheddar cheese
  • 2 tsp taco seasoning
  • 2 tbsp olive oil
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a large baking dish.
  2. In a skillet over medium heat, heat olive oil and sauté chopped onions and bell peppers until softened, about 5 minutes.
  3. Add the drained beans and fire-roasted tomatoes; stir until combined.
  4. Sprinkle in taco seasoning and mix well to coat all ingredients.
  5. Transfer the mixture to the prepared baking dish and top with shredded cheddar cheese.
  6. Bake for 25–30 minutes until bubbly and golden brown on top.
  7. Let cool slightly before garnishing with fresh cilantro. Serve warm.
