  • 1 cup glutinous (sticky) rice
  • 2 ripe mangoes
  • 1 cup full-fat coconut milk
  • 1/3 cup granulated sugar
  • Pinch of salt

Instructions

  1. Rinse the sticky rice under cold water until the water runs clear. Soak in water for at least 6 hours or overnight.
  2. Drain the rice and steam it in a basket lined with cheesecloth over simmering water for 20-25 minutes until tender.
  3. In a saucepan, heat coconut milk with sugar and salt over medium heat until dissolved (do not boil).
  4. Mix half of the coconut sauce into the hot sticky rice and let it sit for 15 minutes.
  5. Peel and slice mangoes into thin strips or cubes.
  6. Serve the sticky rice on a plate with fresh mango slices and drizzle additional coconut sauce over the top.
