  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup chopped bell peppers (mixed colors)
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups shredded cheddar cheese
  • 2 cups crushed tortilla chips
  • ½ cup sour cream

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef until cooked through. Drain any excess fat.
  3. Stir in taco seasoning and water; simmer for about 5 minutes.
  4. In a baking dish, layer half of the crushed tortilla chips, followed by half of the beef mixture, black beans, bell peppers, diced tomatoes, and cheese. Repeat layers.
  5. Top with remaining tortilla chips and bake for 25-30 minutes until bubbly and golden.
  6. Let cool for 10 minutes before serving with sour cream.
