Instructions

  1. Wash sweet potatoes and microwave until tender (about 6 minutes). Let cool slightly, then mash until smooth.
  2. In a bowl, mix mashed sweet potatoes, flour, baking powder, cinnamon, milk, eggs, and vanilla extract until just combined.
  3. Preheat a non-stick skillet over medium heat and lightly grease it with butter or oil.
