  • 2 cups yellow squash, sliced
  • 2 cups zucchini, sliced
  • 1 medium sweet onion, diced
  • 1 cup sharp cheddar cheese, shredded
  • 2 large eggs
  • 1 cup seasoned breadcrumbs

  • 1/2 tsp black pepper
  • 2 tbsp butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Wash and slice yellow squash and zucchini into thin rounds.
  3. In a skillet over medium heat, melt butter and sauté diced onion until translucent. Add sliced squash and zucchini, cooking until slightly softened.
