  • 2 medium sweet potatoes (about 2 cups diced)
  • 1 can (15 oz) black beans, rinsed and drained
  • 2 tbsp olive oil
  • 1 small red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and dice the sweet potatoes into 1-inch cubes. Toss in olive oil, cumin, chili powder, salt, and pepper until evenly coated.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until golden brown and tender.
  4. While the sweet potatoes roast, rinse and drain the black beans; dice the red onion.
  5. Once sweet potatoes are done roasting, let them cool slightly before combining in a large bowl with black beans, red onion, lime juice, and cilantro.
  6. Gently mix all ingredients together without mashing the sweet potatoes. Serve warm or chilled.
