  • ½ cup grated Parmesan cheese
  • Fresh basil leaves (for garnish)

Instructions

  1. Cook rigatoni in a large pot of salted boiling water until al dente (about 10-12 minutes). Drain and reserve some pasta water.
  2. In a large skillet over medium heat, add olive oil and crumble in the sausage. Cook until browned (5-7 minutes).
  3. Add minced garlic to the skillet and sauté for an additional minute until fragrant.
  4. Stir in chopped zucchini and halved cherry tomatoes; cook for 4-5 minutes until veggies soften.
  5. If needed, add reserved pasta water to create a sauce and simmer for a couple of minutes.
  6. Toss cooked rigatoni with the mixture along with torn basil leaves. Serve hot topped with grated Parmesan.
