  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 1 cup fresh raspberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour and 1/4 cup sugar until combined. Cut in cold butter until coarse crumbs form.
  3. Press mixture into the bottom of an ungreased 9×9-inch baking pan. Bake for 15 minutes until golden.
  4. In another bowl, whisk eggs, remaining sugar, lemon juice, and zest until smooth. Gently fold in raspberries.
  5. Pour filling over baked crust and return to oven for 20-25 minutes until set but slightly wobbly.
  6. Let cool completely before slicing into squares.
