  • 4 large bell peppers (red or green)
  • 1 lb lean ground beef or thinly sliced ribeye
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup sliced mushrooms (cremini or button)
  • 1 cup provolone or cheddar cheese, shredded
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove seeds; set aside.
  3. In a skillet over medium heat, heat olive oil. Sauté onions and garlic until translucent.
  4. Add ground beef or steak and mushrooms; cook until browned. Season with salt and pepper.
  5. Stir in half the cheese until melted; fill each pepper with the mixture.
  6. Top each pepper with remaining cheese. Place in a baking dish and cover with foil.
  7. Bake for 25 minutes; uncover for the last 5 minutes to brown cheese slightly.
  8. Let cool before serving; garnish with parsley if desired.
