  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 16 oz cream cheese, softened
  • 3 large eggs
  • 1 cup chopped pecans, toasted
  • ½ cup brown sugar
  • 2 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar until mixed well. Press firmly into the bottom of a greased baking pan.
  2. Bake the crust for 8-10 minutes until golden brown. Let cool slightly.
  3. In another bowl, beat cream cheese until smooth. Gradually add granulated and brown sugars until combined. Mix in eggs one at a time, then stir in vanilla extract.
  4. Fold in chopped pecans, then pour the cheesecake mixture over the cooled crust. Smooth the top with a spatula.
  5. Bake for an additional 30-35 minutes until set but slightly jiggly in the center. Allow to cool completely before refrigerating for at least two hours.
  6. Cut into squares or bars and serve chilled.
