  • 1/2 cup unsalted butter, softened
  • 1 large egg (room temperature)
  • 1 tsp vanilla extract
  • 1 cup powdered sugar (for filling)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking soda, cinnamon, and salt; gradually mix into the wet ingredients until just combined.
  5. Gently fold in rolled oats.
  6. Drop rounded tablespoons of dough onto parchment-lined baking sheets.
  7. Bake for 10-12 minutes or until edges are golden but centers remain soft.
  8. Let cool on the baking sheet for a few minutes before transferring to wire racks.
  9. For the filling, beat together powdered sugar and softened butter until smooth; add vanilla extract.
  10. Once cookies are completely cool, spread filling between two cookies and press gently.
