Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, whisk together flour, baking soda, cinnamon, and salt; gradually mix into the wet ingredients until just combined.
- Gently fold in rolled oats.
- Drop rounded tablespoons of dough onto parchment-lined baking sheets.
- Bake for 10-12 minutes or until edges are golden but centers remain soft.
- Let cool on the baking sheet for a few minutes before transferring to wire racks.
- For the filling, beat together powdered sugar and softened butter until smooth; add vanilla extract.
- Once cookies are completely cool, spread filling between two cookies and press gently.
