  • 1 lb lean ground beef
  • 6 corn or flour tortillas
  • 1 can (15 oz) refried beans
  • 2 cups shredded Mexican cheese blend
  • 1 cup salsa
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tsp garlic powder

Instructions

  1. Preheat the oven to 350°F (175°C) and spray a 9×13-inch baking dish with nonstick cooking spray.
  2. In a large skillet over medium heat, brown the ground beef for about 5-7 minutes. Drain excess fat.
  3. Stir in cumin, chili powder, and garlic powder; cook for an additional 2 minutes.
  4. Layer refried beans at the bottom of the dish, followed by tortillas. Spoon half of the meat mixture over tortillas and add half of the salsa and one cup of cheese. Repeat layers.
  5. Cover with foil and bake for 25 minutes. Remove foil and bake for another 10-15 minutes until golden brown.
