  • 2 tbsp extra virgin olive oil
  • 1 can (14 oz) diced tomatoes
  • 1 cup crumbled feta cheese
  • 2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, warm the olive oil. Sauté the onions until translucent; add garlic and bell peppers until softened.
  3. Increase the heat to medium-high and sear the chicken breasts until golden brown on both sides (about 5 minutes per side).
  4. Stir in the diced tomatoes and oregano; simmer for 5 minutes.
  5. Layer half of the sautéed mixture in a baking dish, place chicken on top, and cover with remaining veggies and feta cheese.
