Ingredients

Scale
  • 1 pre-made graham cracker crust
  • 1 cup granulated sugar
  • 2 tbsp cornstarch
  • 1/4 tsp salt
  • 1 cup water
  • 3/4 cup freshly squeezed lemon juice (about 4 lemons)
  • Zest of 2 lemons
  • 4 large egg yolks
  • 2 tbsp unsalted butter
  • 4 large egg whites
  • 1/4 tsp cream of tartar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Prepare the graham cracker crust according to package instructions and bake until lightly golden, about 10 minutes. Let cool.
  2. In a saucepan, whisk together sugar, cornstarch, salt, water, lemon juice, and zest over medium heat until bubbly and thickened.
  3. Remove from heat and quickly whisk in egg yolks and butter until smooth. Pour the filling into the cooled crust.
  4. In a clean bowl, beat egg whites and cream of tartar on high speed until soft peaks form. Gradually add sugar while beating until stiff peaks form.
  5. Spread meringue over hot lemon filling, sealing edges well. Bake for 10-15 minutes or until meringue is golden brown.
  6. Allow pie to cool at room temperature before slicing.

Keywords: For added flavor, try infusing almond extract into the meringue or substituting lime juice for a tropical twist. To prevent weeping in your meringue, ensure the filling is hot when spreading it on top.
