Ingredients
- 4 boneless, skinless chicken breasts (680g)
- 1 lb (450g) baby Yukon Gold potatoes
- 4 cloves fresh garlic (minced)
- 1 cup grated Parmesan cheese (100g)
- 4 tbsp olive oil (60ml)
- 2 tsp dried Italian herbs
- Salt and pepper to taste
Instructions
- 1. Preheat oven to 400°F (200°C).
- 2. Wash and cut the baby potatoes in half or quarters for even cooking. Toss them in a bowl with 2 tablespoons of olive oil, salt, pepper, dried herbs, and half of the Parmesan cheese until well-coated.
- 3. Pat chicken breasts dry and season both sides with salt and pepper. Heat 2 tablespoons of olive oil in a skillet over medium heat and sear the chicken for about 5 minutes on each side until golden brown.
- 4. Add minced garlic to the skillet during the last minute of searing to infuse flavor.
- 5. In an oven-safe baking dish, layer the seasoned potatoes and place the seared chicken on top. Drizzle remaining olive oil over everything and sprinkle with the rest of the Parmesan cheese.
- 6. Bake in the preheated oven for 25-30 minutes or until chicken reaches an internal temperature of 165°F (74°C). Let rest for 5 minutes before serving.
