  • 4 boneless, skinless chicken breasts (680g)
  • 1 lb (450g) baby Yukon Gold potatoes
  • 4 cloves fresh garlic (minced)
  • 1 cup grated Parmesan cheese (100g)
  • 4 tbsp olive oil (60ml)
  • 2 tsp dried Italian herbs
  • Salt and pepper to taste

Instructions

  1. 1. Preheat oven to 400°F (200°C).
  2. 2. Wash and cut the baby potatoes in half or quarters for even cooking. Toss them in a bowl with 2 tablespoons of olive oil, salt, pepper, dried herbs, and half of the Parmesan cheese until well-coated.
  3. 3. Pat chicken breasts dry and season both sides with salt and pepper. Heat 2 tablespoons of olive oil in a skillet over medium heat and sear the chicken for about 5 minutes on each side until golden brown.
  4. 4. Add minced garlic to the skillet during the last minute of searing to infuse flavor.
  5. 5. In an oven-safe baking dish, layer the seasoned potatoes and place the seared chicken on top. Drizzle remaining olive oil over everything and sprinkle with the rest of the Parmesan cheese.
  6. 6. Bake in the preheated oven for 25-30 minutes or until chicken reaches an internal temperature of 165°F (74°C). Let rest for 5 minutes before serving.
