Ingredients

Scale
  • 1 cup canned pumpkin puree
  • 3/4 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 3 large eggs (room temperature)
  • 8 oz cream cheese (full-fat)
  • 1 cup powdered sugar (sifted)
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C). Line a jelly roll pan (15×10 inches) with parchment paper and lightly grease it.
  2. In a bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, beat eggs and sugar until light and fluffy. Add pumpkin puree and mix until smooth.
  4. Gently fold dry ingredients into wet ingredients until just combined.
  5. Spread batter evenly in the prepared pan and bake for 15-20 minutes or until it springs back when touched.
  6. Once baked, cover with a clean kitchen towel while cooling for about 30 minutes.
  7. Carefully roll the cake from one short end while it's still warm; cool completely on a wire rack.
  8. For the filling, beat cream cheese with powdered sugar and vanilla until creamy. Spread over the cooled cake and re-roll without parchment paper.
  9. Wrap tightly in plastic wrap and chill for at least an hour before slicing.
