- 1 cup fresh cremini or button mushrooms, sliced

- 4 hoagie rolls
- 2 tbsp olive oil (divided)
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the onions and bell peppers; sauté for about 5 minutes until softened.
- Add the sliced mushrooms and cook for another 5 minutes until golden brown.
