  • 1 lb thinly sliced ribeye or sirloin beef
  • 1 cup fresh cremini or button mushrooms, sliced
  • 1 medium sweet onion, sliced
  • 1 medium bell pepper, sliced (red or green)
  • 6 slices provolone cheese
  • 4 hoagie rolls
  • 2 tbsp olive oil (divided)
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the onions and bell peppers; sauté for about 5 minutes until softened.
  2. Add the sliced mushrooms and cook for another 5 minutes until golden brown.
  3. Push the veggies to the side of the skillet, adding more olive oil if necessary. Lay down the thinly sliced beef and cook until browned but still juicy, about 3 minutes.
  4. Layer provolone cheese over the beef mixture and cover the skillet briefly to melt the cheese.
  5. Slice hoagie rolls lengthwise without cutting through completely. Fill each roll generously with the cheesy beef mixture.
  6. Serve hot, optionally accompanied by extra sautéed vegetables.
