  • 8 oz fettuccine pasta
  • 1 lb large shrimp, peeled and deveined
  • 2 cups broccoli florets
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a large pot. Cook the fettuccine according to package instructions until al dente, approximately 8 minutes. Add the broccoli florets during the last two minutes of cooking.
  2. In a skillet, heat olive oil over medium heat. Sauté minced garlic for about one minute until fragrant.
  3. Add shrimp to the skillet and cook for 3-4 minutes until pink and opaque.
  4. Drain pasta and broccoli, reserving half a cup of pasta water. Add them back to the pot.
  5. Pour heavy cream into the skillet with shrimp and garlic; simmer for three minutes until thickened. Gradually stir in Parmesan cheese until melted.
  6. Combine the pasta and broccoli with the sauce, adding reserved pasta water as needed for desired creaminess.
  7. Serve immediately with extra Parmesan if desired.
