- ½ cup freshly grated Parmesan cheese
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F. Cut the butternut squash in half, scoop out the seeds, and roast cut-side down on a baking sheet for about 30-40 minutes until tender.
- In a large skillet, heat olive oil over medium heat. Sauté the onion until translucent (about 6 minutes), then add minced garlic for another minute.
- Add sliced sausage to the skillet and cook until browned and crispy.
- Scoop the roasted squash into a blender or food processor and blend until smooth.
- Pour the blended squash into the skillet with onions and sausage, adding heavy cream gradually while stirring. Let simmer until slightly thickened.
- Cook fettuccine according to package instructions; reserve some pasta water before draining.
- Toss drained pasta into the sauce, mixing well and adding reserved pasta water as needed for desired consistency. Stir in Parmesan cheese until melted.
