  • 1 cup fresh cranberries
  • 1/4 cup freshly squeezed lime juice
  • 1/3 cup light brown sugar
  • 1 tsp garlic powder
  • 2 tbsp low-sodium soy sauce
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 1 tbsp cornstarch + 2 tbsp water (cornstarch slurry)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking dish with parchment paper.
  2. Pat dry chicken breasts and season with salt and pepper. Place in the baking dish.
  3. In a saucepan over medium heat, combine cranberries, lime juice, brown sugar, soy sauce, and garlic powder. Cook until cranberries burst (about 10 minutes).
  4. Stir in cornstarch slurry to thicken the sauce.
  5. Brush half of the glaze over chicken and bake for 25-30 minutes until juices run clear.
  6. Five minutes before finishing, pour remaining glaze over the chicken for a glossy finish.
